Tacos de Alambre
In Mexico, Tacos de Alambre are what you order when you can’t decide, so you choose a bit of everything. Some call it a Mexican stir‑fry. Others compare it to fajitas. But melted cheese & bacon… that’s what makes a real alambre. Beef, capsicum, onion, a bit of bacon, melted cheese… all cooked together & piled onto warm tortillas.

Ingredients
- 8–10 La Tortillería corn tortillas
- 400–450 g beef, cut into thin strips
- 1 tbsp olive oil
- ½ red capsicum, sliced
- ½ green capsicum, sliced
- ½ white onion, sliced
- 1 garlic clove, finely chopped
- 3–4 bacon strips, chopped
- 1 tbsp Worcestershire sauce
- 1–2 tsp Maggi seasoning (to taste)
- ¾ cup shredded cheddar cheese
- La Tortillería salsa roja
- Fresh cilantro
- Lime
- Salt & pepper
Cooking Instructions
- Heat a pan over medium-high heat.
- Season the beef with salt & pepper, then cook until nicely browned. Remove & set aside.
- In the same pan, add olive oil & cook the capsicum for a couple of minutes.
- Add onion, garlic & bacon. Cook until fragrant & slightly crispy.
- Return the beef to the pan, add Worcestershire sauce & Maggi seasoning & mix everything together.
- Add the cheese & stir until melted.
- Warm the tortillas, fill with the alambre mixture & finish with salsa roja, cilantro & a squeeze of lime.
