Ingredients
- 4–5 La Tortillería corn tortillas
- 400–450 g pork scotch fillet (neck), cut into small cubes
- 1 tbsp olive oil
- 2 garlic cloves, finely chopped
- ¼ onion, finely chopped
- Red onion, finely sliced
- Fresh coriander
- Lime
- Salt & pepper
Salsa Ingredients
- ¾ cup peanuts (unsalted)
- 2 medium tomatoes, chopped
- 2 tsp sesame seeds
- ½–¾ cup water
- Salt & pepper
Cooking Instructions
- Heat a pan over medium-high heat with olive oil.
- Season the pork with salt & pepper, then cook until lightly browned.
- Add garlic & onion, cook for 2–3 minutes until soft & fragrant.
- Blend peanuts, tomatoes, sesame seeds & water until smooth.
- Pour the sauce into the pan, mix well & lower the heat. Let it simmer for 10–15 minutes until the sauce thickens & the pork is cooked through.
- If needed, add a splash of water to loosen it. Taste & adjust salt.
- Warm the tortillas, fill with the pork & finish with onion, coriander & lime.
