Pico de gallo & Totopos
Pico de Gallo, the simplest & most essential Mexican staple. Its name means “rooster’s beak,” though no one agrees why. What never changes: tomato, onion, chilli, coriander, lime, & salt. Freshly made for scooping with totopos, topping tacos, or eating straight from the bowl.

Ingredients
- La Tortillería corn totopos
- 2 cups cherry tomatoes, finely chopped
- ¼–½ red onion, finely chopped
- ½–1 jalapeño, finely chopped (to taste)
- 1 small handful fresh coriander, chopped
- Juice of 1–2 limes
- Salt & pepper
Cooking Instructions
- Finely chop the tomatoes, onion, jalapeño & coriander.
- Add everything to a bowl, squeeze in the lime juice & season with salt & pepper.
- Mix well & let it sit for a few minutes so everything comes together.
- Serve with totopos & enjoy fresh.
