Black Bean Salad

Black beans are used in many Mexican dishes & one of the easiest to prepare is a fresh salad, perfect for a summer picnic. The ingredients here combine to give this salad its kick & fresh flavors. Tomatoes & red capsicum give it some sweetness & color, jalapeno will give it a spicy tone, & the avocado & olive oil will smooth it down. This dish looks good & tastes even better. Black beans alone are an excellent source of nutrients, but when you mix them with all the other ingredients of this recipe, you will get a very healthy meal. This black bean salad goes perfectly with some La Tortilleria totopos, & it is best if served chilled. My dressing for this salad includes lime juice, a vital flavor in Mexican cuisine. Sit down at any Mexican restaurant & limes will always be present on the table. I, like most Mexicans, am a big fan of coriander, but if you’re not just substitute it with a some fresh basil or parsley leaves. Easy, tasty & healthy. What else could you want? This dish will please vegans, vegetarians & non-vegetarians alike.

Ingredients

  • 3 limes, juiced
  • ½ cup olive oil
  • 1 garlic clove, finely chopped
  • 1/8 tsp chilli powder or cayenne pepper
  • 2 cans whole black beans, drained & rinseds
  • 1 ½ cups sweet corn
  • 1 avocado, peeled & diced
  • 1 red capsicum, seeds removed & chopped
  • 2 tomatoes, diced
  • 6 spring onions, finely sliced
  • ½ cup fresh coriander, chopped
  • La Tortillería totopos (tortilla chips)
  • Salt & pepper

Cooking Instructions

  1. Place the lime juice, olive oil, garlic & chilli in a jar with lid.  Add salt & pepper to taste, put lid on & shake well.
  2. Mix the beans, corn, avocado, spring onions, tomatoes, coriander & capsicum in a salad bowl.  Shake the dressing one more time & pour over salad mix.
