Tortillas are made with 8 weeks and Totopos are made with12 weeks.
You would receive them with 1 to 3 weeks less than that, allowing for storage and transit.

We sell our tortillas by the kilogram, just like in Mexico. Each packet contains 1kg of tortillas. The number of tortillas per kilogram varies depending on which size of tortilla you get. We sell tortillas in sizes ranging from a diameter of 8cm to 29cm. A carton of tortillas contains 10 x 1kg packets but you can order smaller quantities from one of our online retailers. For non-Victorian customers buying through our distributors, please consult them directly for carton configurations.

Yes. All our products are gluten free and are produced in a 100% gluten free facility. Our tortillas and totopos are certified gluten free by Coeliac Australia.

Yes! La Tortilleria tortillas and tortilla chips contain no enzymes or mysterious non-vegan additives. Our corn tortillas and our totopos are both certified by the Vegan Society and carry the vegan logo.

No, definitively not! Our products are 100% trans fat free.

White corn! White corn is the most common type of corn used for traditional tortilla making, that’s what we use. Our tortillas may appear more yellow than other white corn tortillas you’ve seen; this is because we do not add any preservatives that often act as ‘bleaches’ to make tortillas appear whiter than they naturally would be.

Yes. At this point in time, La Tortilleria corn tortillas are the only certified non-GMO corn tortillas in Australia. Both our tortillas and totopos carry the Cert-ID Non-GMO certification logo. Luckily genetically modified maize is not commercially grown in Australia yet, unlike in the USA and Mexico where chances of contamination with GM corn is high.

Yes, our tortillas maintain their quality very well after freezing. Freeze them for up to one month making sure they are stored airtight, and use them immediately after defrosting.

We don’t use or sell masa harina. We make our tortillas out of real corn wholegrains, which we cook, soak and stone grind ourselves. In traditional tortilla making as used by the Aztecs and Mayans, there is no dry flour involved anywhere in the process. Masa harina was invented in the 1950s as a means to simplify and industrialise the tortilla making process. The dough is dehydrated and processed into a flour, ready to be constituted back into dough by simply adding water, much like an ‘instant tortilla powder’. The difference between the two methods is very similar to making coffee from fresh whole beans, versus the instant coffee you buy in a jar. We make our tortillas fresh and from scratch using whole corn kernels.

Yes, our tortillas maintain their quality very well after freezing. Freeze them for up to one month making sure they are stored airtight, and use them immediately after defrosting.

Our tortillas come with several weeks shelf life. Each packet will be marked with a best before date. Our tortillas do not contain any preservatives, so once opened please eat them within two weeks.

Store your tortillas in a cool dark place; a cupboard or refrigerator works perfectly. Once opened, store airtight in the fridge for one to two weeks, or freezer for up to a month. A tight-fitting tupperware or a plastic bag is best to keep the tortillas airtight.

Heat a frying pan (no oil!) to very hot. Once hot, heat your tortilla on each side until it is soft and floppy, about 10 seconds each side. Alternately heat your tortillas in a hot sandwich press for about 5 seconds. Wrap your tortillas in foil or a thick cloth to stay warm and soften further.

If you are re-heating lots of tortillas at once, place your tortillas in piles of 2 to 4 on the frying pan or sandwich press, instead of individually. This will speed up the process! Remember to wrap the pile in foil or a thick cloth once heated, and then in a tortilla basket or casserole dish to keep them warm as you heat up the rest.
