Black Bean Salad

Black beans are used in many Mexican dishes, and one of the easiest to prepare is a fresh salad, perfect for a summer picnic. The ingredients here combine to give this salad its kick and fresh flavors. Tomatoes and red capsicum give it some sweetness and color, jalapeno will give it a spicy tone, and the avocado and olive oil will smooth it down. This dish looks good and tastes even better. Black beans alone are an excellent source of nutrients, but when you mix them with all the other ingredients of this recipe, you will get a very healthy meal. This black bean salad goes perfectly with some La Tortilleria totopos, and it is best if served chilled. My dressing for this salad includes lime juice, a vital flavor in Mexican cuisine. Sit down at any Mexican restaurant and limes will always be present on the table. I, like most Mexicans, am a big fan of coriander, but if you’re not just substitute it with a some fresh basil or parsley leaves. Easy, tasty, and healthy. What else could you want? This dish will please vegans, vegetarians and non-vegetarians alike.

Ingredients

  • 3 limes, juiced
  • ½ cup olive oil
  • 1 garlic clove, finely chopped
  • 1/8 tsp chile powder or cayenne pepper
  • Salt & pepper
  • 2 cans whole black beans, drained and rinseds
  • 1 ½ cups sweet corn
  • 1 avocado, peeled and diced
  • 1 red capsicum, seeds removed and chopped
  • 2 tomatoes, diced
  • 6 spring onions, finely sliced
  • ½ cup fresh coriander, chopped
  • La Tortilleria totopos (tortilla chips)

Cooking Instructions

  1. Place the lime juice, olive oil, garlic and chile in a jar with lid.  Add salt and pepper to taste, put lid on and shake well.
  2. Mix the beans, corn, avocado, spring onions, tomatoes, coriander and capsicum in a salad bowl.  Shake the dressing one more time and pour over salad mix.
