Pico de gallo & totopos (tortilla chips)

Pico de Gallo, the simplest & most essential Mexican staple. Its name means “rooster’s beak,” though no one agrees why. What never changes: tomato, onion, chilli, coriander, lime, & salt. Freshly made for scooping with totopos, topping tacos, or eating straight from the bowl.

Ingredients

  • La Tortillería corn totopos
  • 2 cups cherry tomatoes, finely chopped
  • ¼–½ red onion, finely chopped
  • ½–1 jalapeño, finely chopped (to taste)
  • 1 small handful fresh coriander, chopped
  • Juice of 1–2 limes
  • Salt & pepper

Cooking Instructions

  1. Finely chop the tomatoes, onion, jalapeño & coriander.
  2. Add everything to a bowl, squeeze in the lime juice & season with salt & pepper.
  3. Mix well & let it sit for a few minutes so everything comes together.
  4. Serve with totopos & enjoy fresh.
