Switch up your taco night with these pork tacos en salsa de cacahuate. A bold, peanut‑chile salsa inspired by classic one‑pan Mexican cooking. Layer onto our warm corn tortillas, top with onion, coriander & lime… & y listo! You’ve got a delicious Mexican bite.

Ingredients

  • 4–5 La Tortillería corn tortillas
  • 400–450 g pork scotch fillet (neck), cut into small cubes
  • 1 tbsp olive oil
  • 2 garlic cloves, finely chopped
  • ¼ onion, finely chopped
  • Red onion, finely sliced
  • Fresh coriander
  • Lime
  • Salt & pepper

Salsa Ingredients

  • ¾ cup peanuts (unsalted)
  • 2 medium tomatoes, chopped
  • 2 tsp sesame seeds
  • ½–¾ cup water
  • Salt & pepper

Cooking Instructions

  1.  Heat a pan over medium-high heat with olive oil.
  2. Season the pork with salt & pepper, then cook until lightly browned.
  3. Add garlic & onion, cook for 2–3 minutes until soft & fragrant.
  4. Blend peanuts, tomatoes, sesame seeds & water until smooth.
  5. Pour the sauce into the pan, mix well & lower the heat. Let it simmer for 10–15 minutes until the sauce thickens & the pork is cooked through.
  6. If needed, add a splash of water to loosen it. Taste & adjust salt.
  7. Warm the tortillas, fill with the pork & finish with onion, coriander & lime.
