What does nixtamalization do to corn?

Nixtamalization uses an alkaline limestone solution to soften corn hulls and unlock essential nutrients. This ancient process transforms whole corn grains into a nutrient-dense dough called masa.

The process fundamentally changes the chemical structure of the grain to make its vitamins and minerals bioavailable.

Nutritional transformation

Nixtamalization increases calcium levels and releases amino acids and B vitamins locked inside the kernels. This converts standard field maize into a nutritional superfood, though individuals with specific dietary requirements should consult a GP or dietitian.

Australian sourcing

We use specialty white field maize grown for us by farmers in northern NSW. This locally grown corn is naturally sun-dried on the plant before it undergoes the nixtamalization process in our Melbourne facility.

The twelve hour steep

Corn kernels are cooked and steeped overnight for 12 hours in water mixed with naturally-occurring limestone. This specific timing ensures the outer hulls soften sufficiently for the grinding process.

Volcanic stone milling

The softened grains are passed through a molino using volcanic stones from Mexico. These stones are manually chiselled to a precise depth to wet-grind the corn into a smooth, pliable masa.

Authenticity versus supermarket alternatives

Mainstream supermarket options often rely on instant masa harina, which skips the traditional steeping and stone-grinding stages. Authentic nixtamalization provides a structural integrity that allows tortillas to support chunky salsas without breaking.

Blue corn variation

Nixtamalization also works on blue corn to create a distinct, nutty flavor and a striking visual contrast. Blue corn tortillas are almost impossible to find elsewhere in Australia.
