The nixtamalization process

At La Tortillería, we use nixtamalization, an ancient Aztec method where whole kernels are soaked overnight and stone-ground into a natural corn dough called masa under the supervision of our 4th generation tortilla maker. Most supermarket tortillas rely on masa harina, which is an instant corn flour that bypasses this laborious traditional grinding process. By avoiding instant flours, we ensure a depth of flavour and a structural integrity that mass-produced alternatives simply cannot replicate.
