How To Turn Christmas Leftovers Into Tortilla Creations
So it’s the day after Christmas, & you have a fridge full of left over turkey, ham, roast chicken, salads, cheeses & more. Sure you could have Christmas dinner all over again, or you could transform these left overs into something new & better: delicious tacos & quesadillas! Corn tortillas are the perfect vessel for using up your left overs, & they go perfectly with traditional Christmas dinner flavours. Turkey, Brie & Cranberry Sauce tacos anyone?

Turkey, Brie & Cranberry Sauce Taco
- Reheat your left over turkey & chop it into bite-sized pieces.
- Slice some brie (or any other left over cheeses).
- Reheat your corn tortillas in a hot dry frying pan until soft, hot & floppy.
- On each tortilla, place the turkey pieces & brie slices, then top with cranberry sauce & any left over greens like asparagus

Ham, Cheese & Avocado Quesadilla
- Slice up any leftover ham & cheese you have. Cut an avocado into thin slices.
- Heat a frying pan (no oil) over low to medium heat.
- Place a corn tortilla in the pan & top with the cheese, ham & avocado.
- Place another tortilla on top & leave in the pan to melt, flipping after a few minutes.
- Remove from the pan, cut in half or quarters to serve.

Turkey, Brie & Cranberry Sauce Quesadilla
- Reheat your left over turkey & chop it into bite-sized pieces.
- Slice some brie (or any other left over cheeses).
- Heat a frying pan (no oil) over low to medium heat.
- Place a corn tortilla in the pan & top with the brie, turkey & some cranberry sauce.
- Place another tortilla on top & leave in the pan to melt, flipping after a few minutes.
- Remove from the pan, cut in half or quarters to serve.

- Reheat your left over chicken, peas & gravy.
- Shred the chicken.
- Reheat your corn tortillas in a hot dry frying pan until soft, hot & floppy.
- On each tortilla, place some shredded chicken, peas & pour the gravy over the top.
