Cheese Stuffed Corn Tortillas Bathed in a Black Bean Sauce

Enfrijoladas are a delightful vegetarian dish featuring cheese-stuffed tortillas bathed in a hearty black bean sauce. In this versatile recipe, beans take centre stage rather than a mere side dish. Add a touch of chili for extra kick or garnish with fresh coriander to elevate the flavors. Plus, with two types of cheese, it’s simply irresistible!

Ingredients

  • 1 kg La Tortillería corn tortillas 14.5cm
  • 1/4 onion, sliced
  • 1/2 Oaxaca cheese
  • 1/4 bunch of coriander
  • 1/2 Feta cheese

Salsa Ingredients:

  • 500g cooked black beans
  • 2 tinned chipotle in adobo
  • 1 garlic clove
  • Salt to taste

Cooking Instructions

  1. Blend all the salsa ingredients together with a bit of water from the beans.
  2. Keep the salsa warm in a saucepan as it will be used hot for the dish.
  3. Shred the cheese & slice the onion thinly.
  4. Heat a pan with a little oil & fry the tortillas until soft.
  5. Place Oaxaca cheese inside each tortilla & top with bean salsa.
  6. Add sliced onion & sprinkle a bit of feta cheese on top.
