Pollo en Mole
This traditional recipe is rich, flavourful & a beautiful medley of sweet & spicy. Deliciously tender braised chicken in mole sauce, ready for serving up as the main event at your next Mexican feast!

Ingredients
- 1.5kg chicken (thigs & leg)
- 1/2 onion
- 2 garlics
- 1 pinch thyme, bay leaves
- Sesame seeds, to taste
- Salt & pepper, to taste
Sauce Ingredients
- 1 bottle Mole
- 1l chicken stock
Cooking Instructions
1. Blend the chicken stock with the chicken mole paste. Check for salt.
2. In a pot, place the chicken with garlic, onion, bay leaves, salt & pepper.
3. Add water & cook over medium heat for 45 minutes until the chicken is tender.In another pot, add the salsa & simmer for 5 minutes.
4. Add the cooked chicken to the salsa & cook for 15 minutes to let the chicken absorb all the flavours from the sauce.
