Costillas de Puerco en Salsa Verde

Pork Ribs in Green Salsa

A staple in cocinas across Mexico, this recipe is comfort cooking at its most flavourful. Tender, juicy pork ribs are simmered in a green tomatillo-based salsa to create a hearty addition to your favourite Mexican sides.

Ingredients

  • 600g pork ribs
  • 2 garlic clove
  • 1/4 onion, sliced
  • 2 long green chillies
  • 150g nopales
  • 1 potato, diced
  • Salt & pepper to taste

Salsa Ingredients

  • 400g tomatillo
  • 3 jalapeño chillies
  • 1/4 onion
  • 1 garlic clove
  • 1/4 bunch coriander
  • Salt to taste

Cooking Instructions

  1. Open the tin of tomatillos, drain them & rinse them under water.
  2. Put the tomatillos, jalapeños, onion & garlic in a pot, covering them with water.
  3. Cook on medium-high heat until everything is soft & well-cooked.
  4. Transfer everything from the pot to a blender along with the remaining ingredients. Add a bit of the cooking water to help the salsa blend smoothly.
  5. Taste & add more salt if needed.
  6. Cut the ribs into small pieces.
  7. Slice the chilies, dice the potato & wash the nopales (cactus).
  8. Stir-fry the ribs for 15-20 minutes until they release their water & brown slightly. Then add the diced potato.
  9. After 5 minutes, add the sliced chillies, sliced onion & washed nopales.
  10. Once the onion is slightly cooked, add the salsa & simmer for 10 minutes. Once the potatoes are cooked, your dish is ready to serve.
