Red Rice

Red Rice is a Mexican staple that's super easy to whip up on a busy weeknight. It's the perfect side dish for your favourite slow-cooked meals or a comfort meal on its own. Ingredients

  • 1 cup rice
  • 2 tomatoes
  • 1/4 onion
  • 1 garlic clove
  • 2 cups chicken stock or water
  • 1 carrot
  • 1 tbsp salt
  • 1 tbsp tomato pure
  • ½ lime
  • 1 long green chilli
  • 80g Green pea
  • 4 tbsp oil

Cooking Instructions

  1. Rinse the rice thoroughly & drain excess water.
  2. Blend tomatoes, onion, garlic, tomato puree & salt with a bit of water or stock.
  3. Dice the carrot & heat the remaining water or chicken stock.
  4. Heat oil in a pot over high heat, add rice & stir until slightly yellow.
  5. Squeeze lime juice over the rice & stir.
  6. Pour the sauce over the rice & stir for 2-3 minutes.
  7. Add the remaining water or chicken stock, carrot, peas, & chilli. Bring to a boil.
  8. Once boiling, taste for salt, then reduce heat to low, cover, & cook for 1 minute.
  9. After 10 minutes, gently stir to distribute the sauce evenly, then cook for an additional 5 minutes.
  10. Turn off the heat & let the rice sit, covered, for 10 more minutes.
  11.  Remove the lid and let it cool for 5 minutes before serving.
