Chicharrón en salsa roja (pork in red salsa) combines tender pork with a delicious red salsa. Tasty on it’s own & made even tastier when served with frijoles & arroz verde, this dish will be sure to fill tummies & satisfy tastebuds. If you’re not into pork, you can always swap this out for beef, chicken or a vegan alternative… "El mundo es tuyo"… the world is yours.

Ingredients

  • 400g pork belly
  • 150g cracker pork (crispy pork skin)
  • 100ml oil or pork fat

Ingredients for salsa

  • 4 tomatoes
  • 3 long green chilli
  • 1 jalapeño
  • 1 spoon white vinegar
  • 2 garlic cloves
  • 1/4 onion
  • Salt & pepper to taste

Cooking Instructions

1. Cut the pork belly into small pieces.

2. Stir-fry the pork belly in oil or pork fat for 15-20 minutes until they release their water & turn golden brown. Add salt & pepper to taste.

3. Chop the salsa ingredients & blend them together with salt to taste & a bit of water to help everything blend well.

4. Add the salsa & simmer for 10 minutes.

5. Add the pork crackling (crispy skin) & let it simmer for another 5-10 minutes.
