Costillas de Puerco en Salsa Verde
A staple in cocinas across Mexico, this recipe is comfort cooking at its most flavourful. Tender, juicy pork ribs are simmered in a green tomatillo-based salsa to create a hearty addition to your favourite Mexican sides.

Ingredients
- 600g pork ribs
- 2 garlic clove
- 1/4 onion, sliced
- 2 long green chillies
- 150g nopales
- 1 potato, diced
- Salt & pepper to taste
Salsa Ingredients
- 400g tomatillo
- 3 jalapeño chillies
- 1/4 onion
- 1 garlic clove
- 1/4 bunch coriander
- Salt to taste
Cooking Instructions
- Open the tin of tomatillos, drain them & rinse them under water.
- Put the tomatillos, jalapeños, onion & garlic in a pot, covering them with water.
- Cook on medium-high heat until everything is soft & well-cooked.
- Transfer everything from the pot to a blender along with the remaining ingredients. Add a bit of the cooking water to help the salsa blend smoothly.
- Taste & add more salt if needed.
- Cut the ribs into small pieces.
- Slice the chilies, dice the potato & wash the nopales (cactus).
- Stir-fry the ribs for 15-20 minutes until they release their water & brown slightly. Then add the diced potato.
- After 5 minutes, add the sliced chillies, sliced onion & washed nopales.
- Once the onion is slightly cooked, add the salsa & simmer for 10 minutes. Once the potatoes are cooked, your dish is ready to serve.
