Enfrijoladas
Enfrijoladas are a delightful vegetarian dish featuring cheese-stuffed tortillas bathed in a hearty black bean sauce. In this versatile recipe, beans take centre stage rather than a mere side dish. Ingredients
- 1 kg La Tortillería corn tortillas 14.5cm
- 1/4 onion, sliced
- 1/2 Oaxaca cheese
- 1/4 bunch of coriander
- 1/2 Feta cheese
Salsa Ingredients:
- 500g cooked black beans
- 2 tinned chipotle in adobo
- 1 garlic clove
- Salt to taste
Cooking Instructions
- Blend all the salsa ingredients together with a bit of water from the beans.
- Keep the salsa warm in a saucepan as it will be used hot for the dish.
- Shred the cheese & slice the onion thinly.
- Heat a pan with a little oil & fry the tortillas until soft.
- Place Oaxaca cheese inside each tortilla & top with bean salsa.
- Add sliced onion & sprinkle a bit of feta cheese on top.
