Ingredients
- 2 La Tortillería corn tortillas
- 2 eggs
- ½ cup refried black beans
- ½ cup shredded cheese
- La Tortillería chipotle salsa
- Queso fresco
- Fresh coriander
- Olive oil
- Lime
Cooking Instructions
- Brush the tortillas lightly with olive oil & bake at 200°C for 15-20 minutes until crisp.
- Spread the beans on each tostada, add shredded cheese & return to the oven until melted.
- Fry your eggs in a little olive oil.
- Place one egg on each tostada.
- Drizzle with chipotle salsa, finish with queso fresco, coriander & a squeeze of lime.
