Pan-Seared Fish Fillets In A Rich Garlic Butter Sauce

Pan-seared fish fillets smothered in a rich garlic butter sauce & served with a vibrant, veggie hit. A light, satisfying meal packed full of flavour.

Ingredients

  • 6 white fish fillets
  • 8 garlic cloves
  • 4 tbsp butter without salt
  • 1/4 cup olive oil
  • 1/4 bunch parsley
  • 2 carrots
  • 1/2 cauliflower
  • 1/2 broccoli
  • 150 g green beans
  • 1 lime
  • Salt & pepper to taste

Cooking Instructions

  1. Wash the fish fillets & pat them dry.
  2. Marinate the fillets with salt & pepper to taste & place them in the fridge.
  3. Slice the garlic & add it along with oil & 3 tbsp of butter in a small pot. Cook over low heat.
  4. Once the garlic is cooked & fragrant, transfer to a side bowl.
  5. Cut the veggies to your preferred size.
  6.  In a pot, bring water to a boil, then add a spoon of butter & a spoon of salt. Add the veggies & cook for 8-10 minutes. Strain the veggies & set them aside.
  7. In a pan over medium-high heat, add a little bit of olive oil. Add the garlic oil, then the seasoned fish. Cook the fish to your preferred level of doneness.
  8. Serve the fish with the veggies on the side, along with white rice & a lime wedge.
