Ingredients
- 500g Chicken (thighs & leg)
- 2g garlic cloves
- 1/2 onion, sliced
- 1 long green chilli
- 300g corn kernels
- 1 cup chicken stock
- 500g zucchini
- 1/4 bunch coriander
- Salt & pepper to taste
Cooking Instructions
- Slice the onion, julienne the chilli & dice the zucchini.
- Chop the garlic finely.
- In a hot pan with oil, sauté the chicken & garlic until golden brown.
- After 10 minutes, add the sliced onion, chilli & corn kernels.
- After 5 minutes, add the diced zucchini & chicken stock. Cover & simmer for 5 minutes.
- Add the bunch of coriander, check for salt & pepper & simmer until the zucchini is cooked.
