Salsa Verde con Totopos

Green Sala with Tortilla Chips

This is the kind of salsa you’ll find on almost every table in México, especially in taquerías where a bowl of totopos & fresh salsa are the unofficial starters of… well, everything. This version is simple, delicious & ready for dipping, splashing & pouring!

Ingredients

  • 200g Totopos from La Tortillería
  • 1 tsp olive oil
  • ½ white onion
  • 1–2 jalapeños
  • 2 garlic cloves
  • 1 cup canned tomatillos, drained
  • Juice of ½ lime
  • Handful fresh cilantro
  • ½ tsp chicken stock powder (optional)
  • Salt & pepper to taste

Cooking Instructions

  1. Heat olive oil in a pan. Add onion, jalapeño & garlic. Let them char for about 8–10 minutes until softened & slightly blistered.
  2. Transfer to a blender with the tomatillos, lime juice, cilantro, stock powder, salt & pepper.
  3. Blend until smooth or slightly chunky, however you like it. Adjust seasoning.
  4. Serve with totopos.
