Tacos Gobernador

A taco fit for a governor! Legend has it that Gobernador Tacos were created in Sinaloa in the ‘90s to impress Governor Francisco Labastida Ochoa after he couldn’t stop raving about his wife’s prawn tacos. Inspired by his love for the dish, a local restaurant he was visiting crafted this cheesy, flavour-packed masterpiece—a delicious fusion of taco & quesadilla. Now, you can bring this iconic bite to your own kitchen!

Ingredients
- 500 g Prawns
- 2 Roma tomatoes
- 1/2 onion
- 1/4 bunch coriander
- 2 poblano chillies
- 2 tbsp chipotle chilli in adobo
- 1 garlic clove
- 1/4 tbsp mustard
- 1 tbsp mayonnaise
- 15 g butter
- 1/4 tbsp paprika
- 1/4 tbsp garlic powder
- 1/4 tbsp oregano
- 400 g Oaxaca cheese
- 2 tbsp olive oil
- 15 pack La Tortillería tortillas
- Salt & pepper to taste
Cooking Instructions
- Clean the poblano chillies, remove the seeds & dice them into roughly 1cm pieces.
- Finely chop the garlic & dice the onion & tomato. Slice the coriander into pieces about 1cm as well.
- Grate the Oaxaca cheese.
- Peel & devein the prawns.
- Cut each prawn into three pieces.
- Toss the prawns in a bowl with paprika, garlic powder, salt & pepper to marinate.
- Heat a bit of butter & olive oil in a pan over medium heat. Once the butter’s melted & bubbling, add the chopped garlic.
- Cook the garlic for 30 seconds, then add the diced onion & cook for another minute.
- Toss in the diced poblano chillies & cook for another minute.
- Add oregano, salt & pepper. Turn up the heat to high & stir for about 4 minutes.
- Now, add the prawns to the pan.
- Once the prawns are cooked through, stir in the mustard, mayonnaise & chipotles in adobo.
- Mix for another minute, then add the coriander & diced tomato until the tomato is soft & juicy.
- To make the quesadillas, dip each tortilla into the salsa from the pan, then place them in a hot pan. Add cheese to each tortilla & wait until it starts to melt.
- Spoon the prawn mixture onto each tortilla, then fold it over.
- Cook until both sides are nice & crispy.¡Buen provecho!
