Are corn tortillas suitable for diabetics?

Corn tortillas are generally a suitable choice for those managing diabetes due to their low sugar content and simple, whole-grain ingredients. Please consult a GP or dietitian for personalized medical advice regarding your specific dietary needs.

The traditional nixtamalization process used to make authentic masa creates a nutritional profile that is significantly different from refined flour alternatives.

Nutritional profile and sugar content

Our white corn tortillas contain 38g of total carbohydrates and only 0.8g of sugars per 100g. This low sugar level is achieved by using only two ingredients; wholegrain Australian white corn and sea salt.

Nixtamalization versus instant masa harina

Each day we cook and soak our corn before stone-grinding it fresh for tortillas, rather than using instant masa harina flour, we preserve the integrity of the wholegrain. This results in a heartier texture, deeper corn flavour and nutritionally superior tortilla compared to the pale, processed tortillas often found in mainstream Australian supermarkets.

Corn tortillas versus flour alternatives

Corn tortillas are a gluten-free alternative to flour tortillas, which typically contain more refined wheat and additives. This makes them a cleaner option for those monitoring their glycemic intake all the while celebrating the authentic taste of Mexican cuisine.
